Free Movement's can break roots, as WK has already said.
For Enforcers and Agents, Rage nanos break something like 95% of all roots. However, some NT roots cannot be broken by Rage.
Barrow Strength/Might of the Revenant do not break roots, but they do give you 100% resistance to being rooted for a few seconds.
Also, a lot of roots have a chance to break when you are hit. So, when you take damage, there is a % chance that the root on you will break.
In PvP (although this has never been confirmed, it is popular myth, however it is one that I believe, through experience) roots never seem to last their full duration. They will cancel and break far quicker than they would in PvM, for example.
When you PvP a non-rooting Profession, for example a Soldier, and you find he/she has rooted you, it is useful to remember that there are several root grafts avaliable in the game. If you find yourself rooted by a non-rooting profession, then this is the likely explanation. These roots break in under 5 seconds, and generally are not to be worried about greatly.
Several nano professions, e.g. NT's and Meta Physicists, have a perk root called 'Quark Containment Field.' This is a nightmare in PvP, because it lasts for one minute and is nigh on impossible to break. Bear this in mind when PvP'ing these professions, especially the MP's, since it can come as a surprise when they root you. Many people even mistake being rooted by an MP as the root graft being used on them, and in a fast moving pvp duel or scenario, this assumption can cause huge problems.
A lot of this you will learn and perfect through experience, and lots of deaths. I can only encourage you to go out, and do not get annoyed when you fail.
